So you know, the application sets *do* change on an upgrade. That's what the 
ubuntu-desktop package is for.  Prior default packages aren't removed (since, 
well, you might like to keep using them and it'd be annoying to discover them 
missing) unless they're removed from the repositories entirely, but the new 
defaults are added.
