I've used Skype for voice frequently and been very happy with it.  When I 
was in China last year and Skype had the "call any US phone for free from 
within the US" special going I was able to VPN into work (Pittsburgh) and 
Skype thought I was in the US so I could call home for free.  I tried a 
video chat from there but the latency was too bad most of the time.  That 
said, voice worked well and video works great in the US and I often use it 
to talk to friends in Europe.  IIRC skype also does point-to-point 
encryption for chat sessions so they may encrypt video and audio too.
