I'm not sure what you mean by email backup, but I always felt safer setting up an mx backup that queues the mail for you in case your email server goes down.  I don't remember exactly how to do it, but I do remember it wasn't too hard on sendmail.

If you mean backups for email like backups for data... maybe you could just use a similar system like rdiff-backup.
