Rich,

if you like tabletkiosk's product take a look at this new item from HTC,
who designs many of the high end mobile handsets:

http://gizmodo.com/gadgets/laptops/htc-shift-is-the-umpc-for-umpc-haters-246965.php

I suspect however that, like other HTC products, HTC itself will not
support a version with Linux as the O.S.

Take a look a the Nokia N800 if you want something running LInux. Nokia
calls it an Internet Tablet Computer but I call it a LInux pocket
server. Here is the url to their usa www site:

    www.nokiausa.com/n800

Amazon is now selling the product at a price slightly lower than list
price. Here is the url to the Amazon.com www page for the product:

http://www.amazon.com/Nokia-N800-Internet-Tablet-PC/dp/B000MK4GGM/ref=pd_bbs_sr_1/104-8012879-4200723?ie=UTF8&s=wireless&qid=1176675294&sr=8-1

And here is the url to the opensource project, maemo that has coalesced
around the Internet Tablet and which is partially bankrolled by Nokia to
stimulate opensource software development in this product class (i.e.
Internet Tablets):

    www.maemo.org

One great thing about this product is that, although it does not have a
CDMA or GSM radio for voice or a EVDO or HSDPA radio for data it does
have, not only an 802.11 radio, but also a Bluetooth 2.0 radio so it can
be easily paired with a mobile handset that supports EVDO or HSDPA, or
for that mater 1xRTT if that is all that is available in a given area in
terms of bandwidth in a given locale. Nokia has indicated that a future
version of this product will incorporate a WIMAX (802.16e) radio.

Best Regards,
