Jay,
Do you have any way of monitoring CPU temperatures on that box? Can you
go without it for a night and run memtest86 for ~ 8 hours?
Issues like this tend to be hardware related. Buggy drivers can cause it
too, but usually you'd see something in a log. I do notice that apcupsd
exits as the last item in your syslog; but I'm not sure that's a cause --
may be a symptom. Userland processes usually have a hard time crashing
the box.
