Gmail
If your a GMail user you can setup fetchmail to pull all email from
your gmail account and dump it in a backup account.
MTA Level
As others have said: Piratically all MTAs have options for archiving
every message that they get.
IDS
You could also try using Snort or another IDS to grab all messages.
This is a neat way to do it because it will not be involved with your
mail server. That separation can be important for some.
