Ahhh... you mean like the video equivalent of Photoshop tracing a
photo to turn it into vector graphics?  You may need to turn to a
commercial package for that (probably a very expensive one).  Here are
some folks talking about vectorizing video:

But deriving the x,y,z angles from a video?  That is a bit more work.

I think what somebody would actually do is build the models from
scratch in Blender or whatever, then define the camera angles and
object motion by running the video underneath as a ref point.  Just a
guess, I have no experience doing that sort of thing.
