We have two Ubuntu v6.06LTS virtual private servers (running under VMware Server) that both run Zimbra v4.5.10 (one is live/production, the other is testing/dev oriented). Aside from the runlevels being different with Ubuntu (I forget the name of what they now call it with Ubuntu) in the event we would need to go into at runlevel 1 or single user mode, no issues were foreseen. To present date, no issues with either of them as well.
We also have a client that runs an EMR/EHR (electronic medical/health record) "dev" system on another virtual private server (Xen based) that is Ubuntu 6.06LTS. No issues what so ever with the Ubuntu side of things there as well.
All three are 24/7x365 too (well, 366 this year ;-) ).
