Justin,

In my experience, it is hard to "go back" from PDF to other formats. In 
most cases much formatting is lost but recovery of text is possible. 
Some methods I've used to extract text:

    Select and copy to clipboard / paste into word processor. This works 
with readers

    Using Adobe Acrobat, save in some form, e.g., as text.

I have Acrobat and could do a quick save in a couple of different 
formats for you if you forward the document to me.
