Zoneminder (http://www.zoneminder.com) works very well for a monitoring
solution.
As for cameras, the sky is the limit. First, you have to decide analog
or IP based units. I would suggest going with the IP units. If you go
with analog cameras, you have the the issue of finding a capture board
that will work with Linux.
I have several of the Foscam FI8918W ($90 on Amazon) units
(http://www.foscam.com) and they work very well for their intended
market. These units work via WiFi and cable, so you can place them
anywhere you can find power, without the hassle of running cables back
to the monitoring station.
Going up from the Foscam unit, you can start getting into some serious
money for better lenses, better resolution, zoom features etc etc. In a
previous job, I sold cameras that retailed for over $2000 and there are
more expensive ones out there.
