Packages are exchangable. The only thing that I found that is different is that RHEL packages contain security info which is good to use for the yum-seucrity package but you can work around this using the yumsecurity google perl script

I am planning on building a new email/web server based on Centos 6. However I
just bought the book "A practical guide to Fedora and Red Hat Enterprise
Linux", 6th edition by Mark Sobell.
My thought is that Centos is very similar to RHEL. So would you think that the
material in the book is 100% relevant to Centos, 60%, 20%, etc? In what areas
should I expect that Centos will deviate?
