[Shenlug] Web design: Multiple pages or long-scrollers?

Hi All, purely an opinion question for you:

I'm starting a big redesign/update of my website

www.themodernhomestead.us

and I'm wondering what is the best way to set up the longer articles. A 
good example is the article on feeds and feeding, which starts at

http://themodernhomestead.us/poultry/feeds_granny.html

When I did the first site design, I set that article up as 11 separate 
pages, internally linked.

I've read some recommendations that I haven't been radical enough, that 
a single page should never have more than *one* screenful of content. 
But I've also seen recommendations that it's a bother clicking from one 
short page to another in a long article.

Certainly, having multiple pages is a pain for me--a lot more work, both 
when I design the site and when I add new content, and have to update 
internal links. I'm inclined to set up an article such as the one on 
feeds as one "long-scroller," with a "back to top of page" link at the 
end of each section.

What's your preference when reading a longer piece on a site--multiple 
pages or long-scroller? Thanks for input.
